Method
- Line an 8x8 baking dish with parchment paper.
- In a small saucepan, warm the peanut butter and honey over low heat until melted and smooth. Remove from heat and stir in vanilla.
- In a large bowl, combine oats, collagen powder, salt, and any optional add-ins.
- Pour the warm honey-peanut butter mixture over the oats and mix until evenly coated.
- Fold in chocolate chips (let the mixture cool a minute first so they don’t melt completely). (or sometimes i melt the chocolate and pour it ontop of the granola bars!)
- Press the mixture firmly into the prepared pan using a spatula or your hands.
- Bake for 30–35 minutes, or until the center is set and edges are golden.
- Refrigerate for at least 1 hour, then cut into bars or squares.
- Store in the fridge for up to 1 week or freeze for longer storage.
