Healthy Protein Pack & Gut Healing Chewy Granola Bars

This is going to be your go-to meal prepping on Sundays. It is simple, it is quick, and you won't feel guilty feeding your kids one of these for breakfast, lunch and dinner. To be honest, my kid's think these are desert, so they eat one after every meal..and I don't feel guilty giving it to them! Ingredients
  

  • 2 Cup Oats
  • 1/2 Cup Peanut Butter
  • 1/2 Cup Raw Honey
  • 2 Scoops Collagen
  • 1/2 Cup Chocolate Chips
  • 1/2 Tsp Real Salt
  • 1 Tsp Vanilla Extract
  • 2 Tbsp Cowboy Colostrum

Method
 

  1. Line an 8x8 baking dish with parchment paper.
  2. In a small saucepan, warm the peanut butter and honey over low heat until melted and smooth. Remove from heat and stir in vanilla.
  3. In a large bowl, combine oats, collagen powder, salt, and any optional add-ins.
  4. Pour the warm honey-peanut butter mixture over the oats and mix until evenly coated.
  5. Fold in chocolate chips (let the mixture cool a minute first so they don’t melt completely). (or sometimes i melt the chocolate and pour it ontop of the granola bars!)
  6. Press the mixture firmly into the prepared pan using a spatula or your hands.
  7. Bake for 30–35 minutes, or until the center is set and edges are golden.
  8. Refrigerate for at least 1 hour, then cut into bars or squares.
  9. Store in the fridge for up to 1 week or freeze for longer storage.

Prep Tip for Busy Moms

Make a double batch on Sunday and keep half in the freezer! They thaw perfectly in lunchboxes or diaper bags for a clean, satisfying snack on the go.
