As a busy mom to four kids that are four in younger I need healthy, quick, filling and nutrient dense foods to fill my kids bellies! With also having a son that needs gluten free and dairy free foods I needed to bake something that I know he would love. With gluten free oats, protein packed peanut butter, maple syrup for sweetness and raw honey for prebiotics and antioxidants I new this would be the perfect breakfast to make during the winter time!

Importance of eating organic foods

This is something I find so important for us to know and how this can all be nutrient dense and healing to our bodies if we allow it.

My FIRST and the MOST IMPORTANT thing is to shop ORGANIC if you can. I know organic foods tend to be pricier but if you can afford it get it! Why?!

  1. Eating organic reduces the amount of chemicals in your diet. More often than not our foods are sprayed with pesticides that can cause a lot of health issues to our bodies such as cancer, diabetes, kidney disease, respiratory issues, neurological disorder and the list goes on.
  2. Eating organic is the best way to avoid GMO foods, ingredients and contamination. Not entirely sure what GMO is? GMO is genetically modified organism, which is a plant, animal, or microorganism that has had its DNA modified using genetic engineering. 
  3. No artificial colors, flavors or preservatives are allowed in organic food.
  4. Organic food contains more vitamins, minerals, enzymes and micronutrients than conventionally raised food
  5. Eating organic can reduce your risk of cancer, diseases and other major health issues.

Instructions

  • Preheat the oven to 375 Degrees.
  • Combine all the ingredients together in a mixing bowl.
  • Pour the ingredients into a 9×9 ceramic dish
  • Bake in the oven for 40-45 minutes or until the top is a golden brown.
  • Top with more peanut butter and serve with a delicious glass of milk for extra protein!

Variations

Different ways you can change this recipe up is by

  • Instead of peanut butter and chocolate chips you could replace that for fruit like strawberries and blueberries!

This is going to be your go-to meal prepping on Sundays. It is simple, it is quick and you won't feel guilty feeding your kids one of these for breakfast, lunch and dinner. To be honest, my kids thing these are desert so they eat one after every meal..and I don't feel guilty giving it to them! Let me show you how to make Healthy Protein Packed & Gut Healing Chewy Granola Bars.

Total Time 2 hours 5 minutes
Servings: 12 Granola Bars
Course: Snack

Ingredients
  

  • 1 Cup Peanut butter of choice
  • 1/2 Cup Honey
  • 2 1/2 Cups Oats of choice
  • 1/2 Cup Mini Chocolate Chips
  • 1 Optional: add 1/3 Cup Collagen 1/4 Cup of Colostrum
  • Optional: Melted Chocolate Chips

Method
 

  1. Combine: Pour all the ingredients into a large glass mixing bowl.
  2. Press and chill: in a 8×8 pan with parchment paper and press the mixture in firmly and evenly.
  3. Refrigerate: Let set in the fridge for at least 2 hours, then cut into bars.
  4. Store: the granola bars in the refrigerator for up to 7 days.
