These are hands down the juiciest, crunchiest, and healthiest air fryer beef taquito’s you will EVER have. Serve this with either salsa, taco sauce, queso or guacamole and honestly these taquitos taste so flavorful just on their own!
Every Tuesday is taco Tuesday in our house. I was tired of the same old build your own tacos and I wanted to spice things up in our lives. So, I decided to try out taquitos. I don’t know if you are like me, but if I am eating a taquito’s… I need it to be crunchy. I need that delicious beef grease oozy out of the sides. I like my food to taste like a walking heart attack but it’s not. Why?! Because I don’t want bad foods going into your body or my body. So, I found a dupe…. yes, you heard me…a dupe. I created a recipe that is like those unhealthy taquito’s but actually this one BENEFITS YOUR BODY because I found a way to sneak healthy foods in.
Ingredients
Making taquito’s can be simple and quick. It is all about the brand of items you buy to make the taquitos. Processed foods are everywhere, and it is up to use to purchase the brands that are cleaner and safer for our bodies. I will list below the ingredients you need and the brands I love and where I purchase them from!
- Organic Ground Beef– Any local grocery store.
- Tortilla Wraps– I love the Siete brand- I purchase from Walmart or Kroger.
- Pinto Beans (or refried Beans)- I like to make my own refried beans so I use pinto beans. I purchase them from Thrive Market. You can also purchase refried beans from Thrive Market as well!
- Organic Mexican Cheese– Purchase from your local grocery store.
- Organic Cauliflower Rice– Purchase from your local grocery store.
- Taco Seasoning– I purchase my taco seasoning from Thrive Market.

Instructions
it is super easy to make these air fryer beef taquitos. The total time is about 30 minutes. Once you have your ground beef brown it takes a total of about 10 minutes. 5 minutes or less to assemble the taquitos and then 5 minutes in the air fryer.
Put the ground beef in a large skillet with a splash of water and let the meat brown.
Drain the grease and break down the ground beef and add the cauliflower rice and the taco seasoning.
Then you will get a can of pinto beans and mash the pinto beans. (You can easily skip this step but just using refried beans. )
Once the pinto beans are smashed it is time to assemble your wraps. Put a layer of beef/cauliflower then the pinto beans, then a layer of cheese and roll up.
Stick a toothpick through the tortilla to keep the wrap in place. Then, stick it in the air-fryer at 400 degrees for five minutes. (Or until the wrap is a golden brown.)
Serve with your favorite Mexican cause and enjoy!
If you are serving these to kids, I found it helpful to cut them in half and serve it to them. It is easier to eat. Also, they are very hot in the center so cutting them in half will help them cool quicker!
Substitutions
Let’s talk about how you can make this even healthier for you and your family. If you are not making these for toddlers, I think that you could most definitely add more vegetables.
- Wraps – Normally for wraps I do make sourdough wraps (or just my regular wraps in general.) My favorite recipe for sourdough wraps is from The Farmhouse on Boone. I’ll put the link to her recipe here! For standard wraps I love Taste of Home. I’ll put the link here!
- Ground Beef – Feel free to use ground turkey or ground chicken or whatever meat substitute you’d prefer!
- Added Veggies – If I was making this for just my husband and I then I would most definitely add more veggies. It would taste delicious was a sprinkle of lettuce and peppers!

Great news, you can store these in the refrigerator for up to 5-7 days (but I promise you they will not last that long because they are so dang good.) Or in the freezer up to 6 months!
Top tip
The key to keep the wraps together is a toothpick. Stick the toothpick right in the middle of the wrap. It will keep everything in place.

The answer is absolutely yes! If I am cooking a meal there is a good chance that I will double the recipe. One to serve right away and one that can be stored away in the freezer for those days that I just don’t feel like cooking.
Beef taquitos are very simple to prep. Follow the instructions below. Do not air fry them. Instead of putting the taquitos into the air fryer, stick them into a glass or stainless-steel dish. Then put a layer of saran wrap. Then put a layer of aluminum foil over. Store in the freezer for up to 6 months!

Air Fryer Beef Taquito’s
Ingredients
- 1 LB Ground Beef Any type of ground meat will do.
- 2-15 OZ Pinto Beans Or refried beans
- 1 Packet Taco Seasoning
- 12 OZ Cauliflower Rice
- 2 8 Count Siete's Tortilla Wraps
Instructions
- Brown the ground beef.
- Drain the grease and break down the ground beef.
- Add in cauliflower rice and taco seasoning.
- Smash the pinto beans with mash potato masher (Or simply use refried beans.)
- Assemble together in the wrap by doing wrap, meat/cauliflower rice, beans, and cheese.
- Roll up the wrap
- Stick a toothpick in the center and fry in the air Fryer for 5 minutes on 400 degrees.
- Serve and enjoy!
