This breakfast casserole dish is made with wholesome and healthy ingredients and sweetened with organic pure maple syrup instead of artificial sweeteners. As a busy mom I love having the ability to meal prep as much foods as possible to make my weeks run smoothly. With the holidays just around the corner I want a healthy and wholesome breakfast to feed my family Christmas morning. This Healthy Holiday French Toast Casserole does just that!

Wrather you are making this for the holidays or simply making for your friends or family to eat during the week this would pair amazingly with my healthy peanut butter oatmeal bake. These two recipes are both delicious, filling, and great to prep on Sunday so you can eat during the week!

Ingredients

The ingredients are very simple, wholesome, and something you should have on hand.

The products that I use!

  • Your favorite bread– I make our own bread and currently we have been making gluten free sourdough bread. However, feel free to use any type of bread you want!
  • Organic Eggs – I prefer from a local farmer but if you don’t have that option available to you any organic eggs at the grocery store will do.
  • Milk– We use raw goat milk from a local farmer as well. This is how we get the recipe dairy free. Feel free to switch this with almond, oat, whole milk. Whatever milk you prefer.
  • Cinnamon
  • Nutmeg
  • Vanilla Extract
  • Pure Maple Syrup– This is how we are sweetening it up!
  • Your choice of toppings: Walnuts, fruit, or even whipped cream. I simply just top our families with some fruit and more pure maple syrup!

Importance of eating organic foods

This is something I find so important for us to know and how this can all be nutrient dense and healing to our bodies if we allow it.

My FIRST and the MOST IMPORTANT thing is to shop ORGANIC if you can. I know organic foods tend to be pricier but if you can afford it get it! Why?!

  1. Eating organic reduces the amount of chemicals in your diet. More often than not our foods are sprayed with pesticides that can cause a lot of health issues to our bodies such as cancer, diabetes, kidney disease, respiratory issues, neurological disorder and the list goes on.
  2. Eating organic is the best way to avoid GMO foods, ingredients and contamination. Not entirely sure what GMO is? GMO is genetically modified organism, which is a plant, animal, or microorganism that has had its DNA modified using genetic engineering. 
  3. No artificial colors, flavors or preservatives are allowed in organic food.
  4. Organic food contains more vitamins, minerals, enzymes and micronutrients than conventionally raised food
  5. Eating organic can reduce your risk of cancer, diseases and other major health issues.

Instructions To Make Healthy Holiday French Toast Casserole

  • Slice– Cut the bread into about 1-inch cubes and place the chopped bread in a 9×13 casserole dish.
  • Mix– In a large mixing bowl, combine the eggs, milk, vanilla extract, spices, and maple syrup.
  • Pour– pour the liquid mixture on top of the bread.
  • Chill– Optional you can let this casserole now chill for an hour in the refrigerator or let it chill overnight in the refrigerator. This will just let the bread absorb more of the egg mixture.
  • Bake-Cover the casserole dish and let it bake at 375 degrees F for about 45-50 minutes or until the casserole dish is fully cooked and is a light brown.
  • Serve– Let the casserole cool off and service with your favorite fruit, mixed nuts and top with more maple syrup and even whipped cream!

Variations on how to make Healthy Holiday French Toast Casserole

Different ways you can change this recipe up is by

  • Change the spices around- don’t be afraid to use different spices. Play around with it! Try cinnamon sugar combination!
  • Milk- use whatever milk best fits you and your needs.
  • Bread- use whatever bread fits you and your needs.

I also like any type of glass storage containers on Amazon. You can store this in the refrigerator for up to 5 days!

This can be stored in the refrigerator for 5 days.

Top tip

To help you and the family eat healthier meal prep this on Sunday and eat it all week as a quick breakfast!

Freeze and Save For Later

To prep the casserole dish and save for later you would prep it by cutting the bread and placing it in the 9×13 casserole dish. Then make the egg mixture and place that on top of the bread mixture.


Instead of baking it right away, cover the dish with plastic wrap and then cover the casserole dish with aluminum foil or if your casserole dish has a lid, cover it with a lid.
Store it in the freezer for up to 3 months.


To bake it, pull the casserole dish out of the freezer the night before and let it unthaw in the refrigerator overnight. Then bake it according to the directions below.

Healthy Peanut Butter Oatmeal Bake is gluten free and dairy free and packed with healthy and nutritious ingredients!

Ingredients
  

  • 3 Bananas
  • 1/4 Cup Creamy Peanut Butter
  • 1 Teaspoon Vanilla Extract
  • 1/4 Cup Pure Maple Syrup
  • 1 Large Egg
  • 3/4 Cup Milk
  • 2 Cups Rolled Oats
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Nutmeg
  • 1/4 Cup Chocolate Chips
  • 1/4 Cup Peanut Butter (for topping)

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan and set aside.
  • In a large bowl, combine the mashed bananas and peanut butter. Stir in the vanilla extract, maple syrup, and egg. Add the milk and mix well.
  • Small overripe bananas,¼ cup creamy peanut butter,1 teaspoon vanilla extract,¼ cup pure maple syrup,1 large egg,¾ cup whole milk
  • Add the rolled oats, baking powder, sea salt, ground cinnamon, and nutmeg to the wet ingredients. Stir until the batter is uniform throughout.
  • Pour the mixture into the prepared baking dish. Top with chocolate chips Bake for 25 minutes, or until the top slightly springs back when touched and the edges are just barely brown
  • If desired, drizzle the top with additional peanut butter. Let cool slightly before cutting into squares. Serve warm or cold. Store in the refrigerator and reheat in the microwave if desired.
