So far this year, I have been lucky enough not to get sick. However, my kids and husband always have some congestion. With that being said, this easy and healing crockpot chicken noodle soup is a staple in my house.

The Benefits of Chicken Noodle Soup
Chicken noodle soup is not only delicious but very beneficial for the body if you are making it homemade.
- Chicken Thighs: High in iron, zinc, and vitamin B. Chicken thighs helps produce a healthy immune system and also helps your metabolism. Thighs are also a great source of protein.
- Carrots: Prevent Heart Disease and cancer, help with eye health, packed with vitamins A, C, B6, and K1, Calcium, Iron, Biotin, Potassium, and Lutein.
- Celery: Prevents cancer and Alzheimers, manages blood sugar, and is packed with vitamins A, C, K, potassium, and folate.
- Onion:High in antioxidants, helps with blood sugar levels, improve digestive health, are anti-inflammatory, are a great source of vitamin c, and keep cancer at bay.
- Chicken Broth: Packed with calcium, magnesium, potassium, Vitamin A, Vitamin K2, Zinc, iron, boron, omega 3, Omega 6, and collagen. It Fights inflammation supports gut health and improves joint health.

The Prep Work
For this soup, I usually start it 48 hours before I am ready to make the actual soup. I wanted fresh bone broth. Though, any type of bone broth is very beneficial to the body. Fresh bone broth is just more flavorful.
Forty-eight hours before I start making this easy and healing crockpot chicken noodle soup, I buy a rotisserie chicken. We will have the rotisserie chicken for dinner that night. In a crockpot I will take the lefover bones, cartilage, skin, and fat that is left over from the rotisserie chicken. Next, I will add in the crockpot veggie scraps like carrots, celery, onion, some fresh herbs, and 1-2 tablespoons of apple cider vinegar. Lisa at The Farmhouse on Boone is the recipe I follow. The one thing I do not use peppercorns, but if that is something you would like to use, go ahead! I also do not use an instant pop. I do not own an instant pot, and my crockpot does just fine. If you have an instant pot, you could then follow Lisa’s step by step process and have fresh broth quicker!
The ingredients
The ingredients are for the most part all clean and organic. Here are the ingredients that is in the healthy and healing crockpot chicken noodle soup!
- 1 Lb of Chicken Thighs
- 1 Tablespoon of unsalted butter
- 2 Tablespoon of avocado oil
- 1 1/2 Cup diced carrots
- 1 1/2 Cups diced celery
- 1 Cup diced onion
- 2 quarts chicken broth
- 6 Ounce spaghetti noodles
- 1 Tablespoon tony chachere’s creole seasoning
- 2 Teaspoons garlic powder
- 1 Teaspoon dried thyme
- 2 Bay leaves
- Salt and pepper to taste
- 1/4 cup of dried or fresh parsley
How to make Healthy and Healing Crockpot Chicken Noodle Soup
This is literally super simple to make! prep and cut all the ingredients and throw them in a crockpot. That is, it! For the chicken thighs I put them in the crockpot whole and then right before I am about to serve the soup, I will pull the chicken thighs out and use my hand mixer to pull the chicken apart. I will start the soup first thing in the morning, and I will have it sit on low all day until we eat dinner. Which is normally around 6:00pm.
Can Chicken and Noodle Soup be Stored in the Freezer?
HANDS DOWN YES! If it cannot be stored in the freezer, then I don’t want to make it. I love doubling batches and storing half of it in the freezer. Soup can also last in the freezer for up to SIX MONTHS. You can simply double, triple, or quadruple this recipe and store it in the freezer!
How to Properly Store Chicken and Noodle Soup in the Freezer?
When it comes to saving food or meal prepping freezers are our best friend. If you know you are wanting to meal prep the soup for a couple of meals in the future, then you might want to do things a little differently.
First cook the soup like normal. Once the soup is all cooked let it cool down. If you put hot soup into the freezer right away, you can unthaw your food that is already frozen. To cool the soup containers off quickly sit the soup in an ice water bath. Stir often. Once they are cool to the touch transfer the soup into the containers you would like to freeze them in. Once you have transferred the soup into the bag make sure that the bag is sealed up tight and labeled. Once you have done that lay flat in the freezer to freeze.
How to Defrost Chicken and Noodle Soup from the Freezer
The best way to defrost this healthy and healing crockpot chicken noodle soup is to take the bag/ container out of the freezer and place it in a large bowl. Then place the bowl in the refrigerator overnight to unthaw. However, sometimes you get those times when you are in a pinch and need something quickly. I try to avoid microwaves at all costs. Running the soup under warm water will help break the soup away from the outer edge. Once you do this, you can pull it out of the bag and place it in your soup pan.
